Hello Everyone! I hope you had a wonderful Thanksgiving! I'm getting back into the swing of meal planning and am excited to see what's in our box this week!
Small Box
1 White Cauliflower
1 bunch Tatsoi
1 bunch Mizuna
1 bunch Purple Kale
1 pound Broccoli
1 Celebrity Tomato
1 bulb Fennel
1 Romaine Lettuce
1 bunch Round Carrots
3 Artichokes
1 bunch French Radish
*A salad for lunches will be made with some Lettuce, some Mizuna, some tomato, carrots and radishes.
*Lettuce & tomato will also be used for sandwiches.
*Fennel will be roasted with some olive oil, salt & pepper for a yummy snack.
*Some Kale will be made into Kale Chips.

11/16/11 Menu Plan: Underwood Farms CSA Small Box
Small Box
1 Iceburg Lettuce
1 bunch Purple Kale
1 Fennel Bulb
1 bunch Beets
1 Colored Cauliflower
1 bunch French Radish
1 purple Carrots
1 bunch Mizuna
1 bunch bok Choy
1 Napa Cabbage
1 Butternut Squash
*Iceburg Lettuce, Radish, Carrots, & some Mizuna will be used to make a salad for lunches.
*Fennel will be roasted in the oven with a little oil, salt, pepper & parmesan for a snack.
*Also using some lettuce for sandwiches, and some carrots the kids will gobble up.
*I will be juicing the Kale with some frozen fruit.

Amish Slaw
To accompany the slaw I am throwing some chicken breasts in the crock pot. Save some cabbage for tomorrow night.
Thursday, November 18th
Rainbow Stir Fry - You can sub the beef with chicken, shrimp, or just go vegeatarian.

So, I'm a lot behind this week & have had some things come up & still have a ton of veggies to use up! Supercook to the rescue! I entered all the CSA Box ingredients and a few staple ingredients I always have. Here are some links to some great recipes Supercook returned to utilize a bunch of the veggies in a more condensed time period. Enjoy!
